Ingredients:

  • 1 medium courgette, sliced
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 1 large carrot, sliced
  • 2 medium tomatoes, diced
  • 2 medium potatoes, diced
  • 1 block (14 oz) firm tofu, drained and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the courgette, broccoli, garlic, carrot, tomatoes, potatoes, and cubed tofu.
  3. Drizzle with olive oil and sprinkle with oregano, basil, salt, and pepper. Toss everything together until well coated.
  4. Transfer the mixture to a baking dish and spread it out evenly.
  5. Bake in the preheated oven for 30-35 minutes, or until the vegetables are tender and the tofu is golden.
  6. Remove from the oven and let it cool slightly before garnishing with fresh parsley.
  7. Serve warm as a main course or as a hearty side dish.
