Ingredients:

  • 2 cups diced tomatoes (fresh or canned)
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 zucchini, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onions and sauté until they become translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute, being careful not to burn it.
  4. Add the diced bell pepper and zucchini, cooking until they soften, about 3-4 minutes.
  5. Stir in the diced tomatoes, oregano, basil, and red pepper flakes if using. Season with salt and pepper to taste.
  6. Bring the mixture to a simmer and reduce the heat to low. Let it cook for about 20-25 minutes, stirring occasionally, until the vegetables are tender and the flavors meld together.
  7. Taste and adjust seasoning if necessary. Remove from heat and let it sit for a few minutes.
  8. Serve warm, garnished with fresh parsley.
