Ingredients:

  • 2 white fish fillets (such as cod or tilapia)
  • 8 oz pasta (spaghetti or linguine)
  • 2 medium potatoes, diced
  • 2 cups cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish
  • Grated Parmesan cheese (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for about 25-30 minutes, or until golden and tender.
  3. While the potatoes are roasting, cook the pasta according to package instructions until al dente. Drain and set aside.
  4. In a large skillet, heat the remaining olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  5. Add the minced garlic and cook for an additional minute, stirring frequently to avoid burning.
  6. Stir in the halved cherry tomatoes and oregano. Cook for about 5-7 minutes, until the tomatoes soften and release their juices.
  7. Season the white fish fillets with salt and pepper. Gently place them in the skillet with the tomato mixture, cover, and cook for about 5-7 minutes, or until the fish is cooked through and flakes easily with a fork.
  8. Add the cooked pasta to the skillet, tossing gently to combine everything. Adjust seasoning if needed.
  9. Serve the pasta topped with roasted potatoes and garnish with fresh basil and grated Parmesan cheese if desired.
