Ingredients:

  • 4 large bell peppers (any color)
  • 2 cups leftover taco meat
  • 1 cup cooked rice (white or brown)
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, frozen or fresh
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Sour cream or Greek yogurt (optional, for serving)
  • Lime wedges (for serving)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large mixing bowl, combine the leftover taco meat, cooked rice, black beans, corn, half of the shredded cheese, cumin, chili powder, salt, and pepper.
  4. Stuff each bell pepper with the taco meat mixture, packing it tightly.
  5. Place the stuffed peppers upright in a baking dish. If desired, add a little water to the bottom of the dish to help steam the peppers.
  6. Cover the dish with aluminum foil and bake for 25 minutes.
  7. Remove the foil, sprinkle the remaining cheese on top of each pepper, and bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let cool slightly before serving.
  9. Garnish with fresh cilantro and serve with sour cream or Greek yogurt and lime wedges on the side.
