Ingredients:

  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 8 oz cream cheese, softened
  • 4 cups powdered sugar
  • 1 cup blackberry puree (fresh or frozen)
  • 1 teaspoon vanilla extract (for frosting)
  • Edible glitter (for decoration)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients and mix on medium speed for 2 minutes.
  4. Stir in the boiling water until well combined (the batter will be thin).
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  8. While the cakes cool, prepare the frosting by beating the softened cream cheese until smooth. Gradually add the powdered sugar and continue to mix until combined.
  9. Add the blackberry puree and vanilla extract to the frosting, mixing until well incorporated.
  10. Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of blackberry cream cheese frosting on top.
  11. Place the second cake layer on top and frost the top and sides of the entire cake.
