Ingredients:

  • 1 cup millet
  • 1 can (15 oz) red beans, drained and rinsed
  • 1 can (15 oz) garbanzo beans, drained and rinsed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Juice of 1 lime

Instructions:

  1. Rinse millet under cold water and drain well.
  2. In a medium pot, heat olive oil over medium heat. Add onions and sauté until translucent, about 5 minutes.
  3. Add garlic and bell pepper, and sauté for another 2-3 minutes until fragrant.
  4. Stir in the cumin, smoked paprika, and oregano, cooking for an additional minute to toast the spices.
  5. Add the millet and vegetable broth to the pot, bringing it to a boil. Reduce heat to low, cover, and simmer for about 15 minutes, or until millet is tender and liquid is absorbed.
  6. Once cooked, fluff the millet with a fork, then stir in the red beans and garbanzo beans, mixing well to combine.
  7. Season with salt, pepper, and lime juice. Garnish with fresh cilantro before serving.
