Ingredients:

  • 1 cup millet
  • 1/2 cup cooked red beans
  • 1/2 cup cooked garbanzo beans
  • 2 cups vegetable broth
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lemon

Instructions:

  1. Rinse the millet under cold water and drain.
  2. In a medium saucepan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the millet, cumin, smoked paprika, salt, and pepper, cooking for an additional 2 minutes to toast the millet.
  5. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes or until the millet is tender and the liquid is absorbed.
  6. Once cooked, fluff the millet with a fork and gently mix in the red beans, garbanzo beans, fresh parsley, and cilantro.
  7. Finish with a squeeze of lemon juice and adjust seasoning if needed.
  8. Serve warm as a main course or as a hearty side dish.
