Miso Ginger Tofu with Radish Salad

Ingredients:

  • 1 block firm tofu, pressed and cubed
  • 2 tablespoons white miso paste
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil
  • 1 teaspoon rice vinegar
  • 1 bunch radishes, thinly sliced
  • 1 tablespoon green onions, chopped
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste
  • Mixed salad greens for serving

Instructions:

  1. In a bowl, whisk together miso paste, grated ginger, soy sauce, and sesame oil to create a marinade.
  2. Add the cubed tofu to the marinade, gently tossing to coat. Let it marinate for at least 30 minutes.
  3. While the tofu marinates, prepare the radish salad. In a separate bowl, combine sliced radishes, green onions, sesame seeds, rice vinegar, and a pinch of salt and pepper. Toss well and set aside.
  4. Heat a non-stick skillet over medium-high heat. Add the marinated tofu and cook for about 4-5 minutes on each side, or until golden brown and crispy.
  5. To serve, place a bed of mixed salad greens on a plate, top with the crispy tofu, and add the radish salad on the side.
