Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 1 cup shiitake mushrooms, sliced
  • 2 cups mixed vegetables (bell peppers, snow peas, and carrots)
  • 2 tablespoons miso paste
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 2 green onions, sliced
  • 1 tablespoon vegetable oil
  • Cooked rice or quinoa, for serving

Instructions:

  1. In a small bowl, whisk together miso paste, soy sauce, sesame oil, minced ginger, and garlic until smooth.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the sliced shiitake mushrooms and mixed vegetables to the pan, stirring frequently until they begin to soften, about 3-4 minutes.
  4. Add the shrimp to the skillet and cook until they turn pink and opaque, about 3-5 minutes.
  5. Pour the miso sauce over the shrimp and vegetables, tossing to coat evenly. Cook for an additional 2 minutes to heat through.
  6. Remove from heat and sprinkle with sliced green onions before serving.
