Ingredients:

  • 2 cups cooked jasmine rice
  • 1 cup diced pork tenderloin
  • 1 cup mixed vegetables (carrots, peas, bell peppers, and corn)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 2 teaspoons sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 green onions, sliced
  • 1 egg, lightly beaten
  • Salt and pepper to taste

Instructions:

  1. Heat a large skillet or wok over medium-high heat and add the sesame oil.
  2. Add the diced pork and cook until browned and cooked through, about 5-7 minutes. Remove from the pan and set aside.
  3. In the same pan, add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.
  4. Add the mixed vegetables and stir-fry for 3-4 minutes until they are tender but still crisp.
  5. Push the vegetables to one side of the pan and pour in the beaten egg on the other side. Scramble the egg until fully cooked.
  6. Add the cooked rice to the pan, along with the pork, soy sauce, oyster sauce, and green onions. Stir well to combine and heat through.
  7. Season with salt and pepper to taste. Serve hot, garnished with additional green onions if desired.
