Ingredients:

  • 1 pound shark fillet, cut into strips
  • 1 cup mole sauce (homemade or store-bought)
  • 4 large flour tortillas
  • 1 cup cooked rice
  • 1 cup black beans, rinsed and drained
  • 1 avocado, sliced
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup diced red onion
  • 1 lime, cut into wedges
  • Salt and pepper to taste

Instructions:

  1. In a skillet over medium heat, lightly season the shark fillet strips with salt and pepper.
  2. Cook the shark fillet for about 3-4 minutes on each side until cooked through and flaky.
  3. In a separate pot, heat the mole sauce until warm.
  4. Warm the flour tortillas in a dry skillet or microwave until pliable.
  5. To assemble the burrito, place a layer of rice and black beans on each tortilla.
  6. Add the cooked shark strips on top of the beans and rice, then drizzle with warm mole sauce.
