Ingredients:

  • 2 cups Montmorency cherry juice concentrate
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 package (1.75 oz) fruit pectin
  • 1/4 teaspoon butter (optional, for foaming)

Instructions:

  1. In a large pot, combine the Montmorency cherry juice concentrate, sugar, and lemon juice. Stir well to dissolve the sugar.
  2. Add the fruit pectin to the mixture and bring it to a rolling boil over medium-high heat, stirring constantly.
  3. Once boiling, add the vanilla extract and continue to boil for 1-2 minutes, stirring frequently.
  4. If using, add the butter to reduce foaming, stirring until melted.
  5. Remove the pot from the heat and skim off any foam that has formed on the surface.
  6. Pour the hot jelly into sterilized jars, leaving about 1/4 inch of headspace. Seal with lids immediately.
  7. Allow the jars to cool at room temperature, then store them in the refrigerator or a cool, dark place.
