Ingredients:

  • 1 cup mixed nuts (almonds, walnuts, cashews)
  • 1/2 cup peanut butter (smooth or crunchy)
  • 1/4 cup honey
  • 1/2 cup chocolate chips
  • 1 cup rolled oats
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions:

  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, mixed nuts, and salt.
  3. In a small saucepan over low heat, melt the peanut butter and honey together, stirring until smooth and well combined. Remove from heat and stir in the vanilla extract.
  4. Pour the peanut butter mixture over the oat and nut mixture. Stir until everything is evenly coated.
  5. Fold in the chocolate chips gently.
  6. Transfer the mixture to the prepared baking dish and press it down firmly with a spatula or your hands to create an even layer.
  7. Bake in the preheated oven for about 20-25 minutes, or until the edges are golden brown.
  8. Allow to cool completely in the pan before lifting out and cutting into bars.
