Ingredients:

  • 1 cup oat flour
  • 1 cup oat milk
  • 1 scoop protein powder (vanilla or unflavored)
  • 2 tablespoons flax meal
  • 2 tablespoons butter (melted)
  • 2 tablespoons sugar
  • 2 teaspoons baking powder

Instructions:

  1. In a large mixing bowl, combine the oat flour, protein powder, flax meal, sugar, and baking powder.
  2. In another bowl, whisk together the oat milk and melted butter until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Let the batter rest for 5 minutes.
  4. Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
