Ingredients:

  • 1 lb chicken breast, diced
  • 2 cups chicken broth
  • 1 cup rice (white or brown)
  • 1 bell pepper (red, yellow, or green), diced
  • 1 medium onion, chopped
  • 1 cup green beans, trimmed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 3-4 minutes.
  2. Add minced garlic and diced chicken to the skillet. Season with salt, pepper, and smoked paprika. Cook until the chicken is browned on all sides, about 5-7 minutes.
  3. Stir in the diced bell pepper and green beans, cooking for another 3-4 minutes until the vegetables begin to soften.
  4. Add the rice to the skillet and stir to combine with the chicken and vegetables.
  5. Pour in the chicken broth, bringing the mixture to a boil. Once boiling, reduce heat to low, cover, and let simmer for about 20 minutes, or until the rice is cooked and has absorbed the broth.
  6. Remove from heat and let sit, covered, for an additional 5 minutes. Fluff with a fork and garnish with fresh parsley before serving.
