Ingredients:

  • 1 trout fillet
  • 1 tablespoon olive oil
  • 1 lemon (zested and juiced)
  • 1 garlic clove, minced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/2 cup asparagus, trimmed and cut into 2-inch pieces
  • 1/4 cup fresh parsley, chopped

Instructions:

  1. Preheat your oven to 400°F (200°C).

  3. Place the trout fillet on a large piece of parchment paper on a baking sheet.
