Ingredients:

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 pound shrimp, peeled and deveined
  • 1/2 cup craisins
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup green onion, sliced
  • Zest and juice of 1 orange
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. Rinse the quinoa under cold water and drain well.
  2. In a medium saucepan, combine the quinoa and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the liquid is absorbed.
  3. While the quinoa is cooking, heat olive oil in a large skillet over medium heat. Add the shrimp and sauté until they turn pink and opaque, about 3-4 minutes. Season with salt and pepper.
  4. Once the shrimp are cooked, add the craisins, orange zest, and orange juice to the skillet. Stir to combine and cook for an additional 2 minutes.
  5. Fluff the cooked quinoa with a fork and add it to the skillet with the shrimp mixture. Toss gently to combine all ingredients.
  6. Remove from heat and stir in the chopped parsley and sliced green onions. Adjust seasoning with salt and pepper if needed.
  7. Serve warm, garnished with additional parsley if desired.
