Orange-Glazed Baby Carrots with Thyme

Ingredients:

  • 1 pound baby carrots
  • 1/2 cup freshly squeezed orange juice
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon olive oil
  • 1 teaspoon orange zest
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste

Instructions:

  1. In a medium saucepan, combine the baby carrots and enough water to cover them. Bring to a boil and cook for about 5-7 minutes until tender but still crisp. Drain and set aside.
  2. In the same saucepan, combine the orange juice, honey (or maple syrup), olive oil, orange zest, thyme, salt, and pepper. Bring to a simmer over medium heat.
  3. Add the cooked baby carrots to the saucepan and toss to coat them in the glaze. Cook for an additional 5 minutes, stirring occasionally, until the carrots are heated through and the glaze has thickened slightly.
  4. Remove from heat and let cool for a couple of minutes before serving. Garnish with additional thyme if desired.
