Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/2 cup granulated sugar
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • Zest of 1 orange
  • 1/2 cup chopped almonds (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large mixing bowl, whisk together the all-purpose flour, almond flour, granulated sugar, baking powder, and salt.
  3. In another bowl, mix together the orange juice, vegetable oil, eggs, vanilla extract, and orange zest until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. If using, fold in the chopped almonds for added texture.
  6. Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
