Ingredients:

  • 4 medium zucchini, spiralized
  • 1 pound shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, zested and juiced
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.
  3. Increase the heat to medium-high and add the shrimp to the skillet. Season with salt and pepper. Cook for 2-3 minutes until the shrimp turns pink and is cooked through.
  4. Add the lemon zest and juice to the skillet, stirring to combine with the shrimp.
  5. In a separate pan, heat the remaining tablespoon of olive oil over medium heat. Add the spiralized zucchini and sauté for 2-3 minutes until just tender.
  6. Combine the zoodles with the shrimp mixture, tossing gently to coat.
  7. Serve immediately, garnished with fresh parsley.
