Ingredients:

  • 1 bunch mustard greens, washed and chopped
  • 1 tablespoon panch phoron spice blend
  • 2 tablespoons mustard oil (or vegetable oil)
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 green chili, slit (optional)
  • Salt to taste
  • 1 tablespoon lemon juice
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat the mustard oil in a large pan over medium heat until hot.
  2. Add the panch phoron spice blend and let it sizzle for about 30 seconds until fragrant.
  3. Add the sliced onions and sauté until they become translucent.
  4. Stir in the minced garlic, grated ginger, and green chili, cooking for another minute until fragrant.
  5. Add the chopped mustard greens to the pan, stirring well to combine with the spice mixture.
  6. Season with salt to taste and cook for about 5-7 minutes, until the greens are wilted and tender.
  7. Remove from heat and drizzle with lemon juice.
  8. Garnish with fresh coriander leaves before serving.
