Ingredients:

  • 1 cup basmati rice
  • 200g paneer, cubed
  • 2 cups green beans, trimmed and cut into 1-inch pieces
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 2 tablespoons olive oil
  • Salt, to taste
  • Fresh cilantro, for garnish
  • Juice of 1 lemon

Instructions:

  1. Rinse the basmati rice under cold water until the water runs clear. Cook the rice according to package instructions and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add cumin seeds and sauté until they start to crackle.
  3. Add sliced onions to the skillet and cook until they turn golden brown, about 5-7 minutes.
  4. Stir in minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  5. Add the cubed paneer to the skillet and cook until golden on all sides, about 5 minutes.
  6. Incorporate the green beans, turmeric powder, garam masala, and salt. Stir well and cook for about 5-7 minutes, or until the green beans are tender but still crisp.
  7. Remove from heat and drizzle lemon juice over the mixture. Toss to combine.
  8. To serve, place a portion of the cooked basmati rice in a bowl, top it with the paneer and green bean mixture, and garnish with fresh cilantro.
