Ingredients:

  • 2 boneless, skinless chicken breasts
  • 8 oz pasta (your choice, such as penne or fusilli)
  • 1 cup sweetcorn (fresh or frozen)
  • 1 cup broccoli florets
  • 2 tablespoons soy sauce
  • 1 tablespoon smoked paprika
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt, pepper, and smoked paprika.
  3. Add the chicken to the skillet and cook for about 6-7 minutes on each side until fully cooked and golden brown. Remove from the skillet and let it rest for a few minutes before slicing.
  4. In the same skillet, add broccoli and sweetcorn and sauté for about 3-4 minutes until they are tender but still vibrant.
  5. Add the cooked pasta to the skillet with the vegetables. Pour in the soy sauce and mix well to combine all ingredients.
  6. Slice the chicken and place it on top of the pasta mixture. Garnish with fresh parsley if desired.
