Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup butter, softened
  • 1/4 cup frozen passion fruit pulp, thawed
  • 1/4 cup Jell-O powder (passion fruit flavor)
  • 1 tablespoon Knox gelatin
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small bowl, dissolve the Knox gelatin in water and let it sit for about 5 minutes to bloom.
  3. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the thawed passion fruit pulp, Jell-O powder, bloomed gelatin, and vanilla extract to the butter mixture. Mix until well combined.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
