Ingredients:

  • 2 ripe peaches, peeled and sliced
  • 2 medium apples, peeled, cored, and sliced
  • 1 cup all-purpose flour
  • 1/2 cup butter, softened
  • 1/2 cup dark brown sugar
  • 1/4 cup cane sugar
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 eggs
  • 1 teaspoon ground cinnamon
  • 1/2 cup oat milk
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the sliced peaches and apples. Sprinkle with 1/4 cup of dark brown sugar and 1/2 teaspoon of cinnamon. Toss to coat and set aside.
  3. In another bowl, cream together the softened butter, remaining dark brown sugar, and cane sugar until light and fluffy.
  4. Add the eggs, oat milk, and vanilla extract to the butter mixture and mix until well combined.
  5. In a separate bowl, whisk together the flour, baking soda, baking powder, and the remaining cinnamon.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Spread the fruit mixture evenly in a greased baking dish. Pour the batter over the fruit, spreading it gently to cover.
  8. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
  9. Allow to cool slightly before serving. Enjoy warm or at room temperature.
