Ingredients:

  • 4 cups fresh peaches, sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh basil, chopped
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the sliced peaches, granulated sugar, lemon juice, chopped basil, and vanilla extract. Toss to coat the peaches evenly and set aside.
  3. In another bowl, whisk together the flour, brown sugar, baking powder, salt, cinnamon, and nutmeg.
  4. Add the melted butter and milk to the dry ingredients, stirring until just combined.
  5. Pour the batter into a greased 9x13-inch baking dish. Spoon the peach mixture over the batter, spreading it evenly.
  6. Bake in the preheated oven for 40-45 minutes, or until the cobbler is golden brown and a toothpick inserted in the center comes out clean.
