Ingredients:

  • 4 cups fresh peaches, sliced
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 1 cup almond flour
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the sliced peaches, granulated sugar, lemon juice, vanilla extract, and cinnamon. Toss gently to coat the peaches evenly and set aside to macerate for about 15 minutes.
  3. In another bowl, mix the all-purpose flour, almond flour, baking powder, and salt.
  4. Add the melted butter and milk to the flour mixture, stirring until just combined. Do not overmix.
  5. Pour the peach mixture into a greased baking dish, spreading it evenly.
  6. Spoon the batter over the peaches, spreading it gently to cover as much of the fruit as possible.
  7. Bake for 40-45 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Allow to cool slightly before serving. Enjoy warm, optionally with a scoop of vanilla ice cream.
