  • 2 cups rolled oats
  • 1/2 cup creamy peanut butter
  • 1/4 cup honey or maple syrup
  • 2 cups almond milk (or any plant-based milk)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup fruit preserves or jelly (your choice of flavor)
  • 1/4 cup chopped nuts (optional, for topping)
  • 1/4 cup fresh berries (optional, for garnish)

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a 9x9-inch baking dish.
  2. In a large bowl, combine the rolled oats, salt, cinnamon, and chopped nuts (if using).
  3. In another bowl, mix together the almond milk, peanut butter, honey (or maple syrup), and vanilla extract until smooth.
