Ingredients:

  • 1 cup cooked and mashed sweet potatoes
  • 1/2 cup creamy peanut butter
  • 1/3 cup maple syrup
  • 1/4 cup brewed coffee, cooled
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. In a large bowl, combine the mashed sweet potatoes, peanut butter, maple syrup, and brewed coffee. Mix until smooth.
  3. Add the cocoa powder, baking powder, salt, and vanilla extract to the sweet potato mixture. Stir until fully combined.
  4. Fold in the dark chocolate chips until evenly distributed.
  5. Pour the batter into the prepared baking pan and spread it evenly.
  6. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out mostly clean.
  7. Allow the brownies to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
