Ingredients:

  • 1 cup cream cheese, softened
  • 1/2 cup peanut butter
  • 1/2 cup protein powder (vanilla or chocolate)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup Greek yogurt
  • 1/2 cup crushed graham crackers (for the crust)
  • 2 tablespoons melted butter (for the crust)
  • Pinch of salt

Instructions:

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine the crushed graham crackers with melted butter and a pinch of salt. Press this mixture into the bottom of a springform pan to form the crust.
  3. In another bowl, blend the softened cream cheese, peanut butter, protein powder, honey (or maple syrup), vanilla extract, and Greek yogurt until smooth and creamy.
  4. Pour the peanut butter mixture over the crust in the springform pan, smoothing the top with a spatula.
  5. Bake in the preheated oven for about 25-30 minutes, or until the edges are set but the center is slightly jiggly.
  6. Allow the cheesecake to cool at room temperature, then refrigerate for at least 4 hours or overnight for the best texture.
  7. Slice and serve chilled, garnished with extra peanut butter drizzle or crushed peanuts if desired.
