Ingredients:

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter, softened
  • 1 cup buttermilk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips
  • 1 cup powdered sugar
  • 3 tablespoons cocoa powder
  • 3 tablespoons milk
  • 1/4 cup crushed peanuts for garnish

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a large bowl, beat together the peanut butter, granulated sugar, brown sugar, and butter until creamy.
  3. Add buttermilk, eggs, and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
  6. Fold in the chocolate chips gently.
  7. Pour the batter into the prepared baking pan and smooth the top.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the cake to cool completely in the pan on a wire rack.
  10. For the frosting, in a medium bowl, mix together powdered sugar, cocoa powder, and milk until smooth.
  11. Spread the frosting over the cooled cake and sprinkle with crushed peanuts for garnish.
