Ingredients:

  • 9 lasagna noodles
  • 1 cup mascarpone cheese
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut cream
  • 1/4 cup crushed pineapple, drained
  • 1 tablespoon rum extract
  • 1/2 cup sweetened shredded coconut
  • 1/4 cup chopped fresh pineapple for topping
  • whipped cream for garnish

Instructions:

  1. Cook the lasagna noodles according to package instructions until al dente, then drain and set aside.
  2. In a mixing bowl, combine the mascarpone cheese, cream cheese, powdered sugar, vanilla extract, coconut cream, rum extract, and crushed pineapple. Mix until smooth and well combined.
  3. Lay three lasagna noodles in the bottom of a 9x13 inch baking dish.
  4. Spread half of the mascarpone mixture over the noodles, then sprinkle with a third of the shredded coconut.
  5. Repeat the layers: add three more noodles, the remaining mascarpone mixture, and another third of the shredded coconut.
  6. Top with the final three noodles and the remaining shredded coconut.
  7. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld.
  8. Before serving, garnish with fresh pineapple and whipped cream.
