Ingredients:

  • 1 can (20 oz) sliced pineapple, drained
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup coconut milk
  • 1/2 cup shredded coconut
  • 1/4 cup toasted coconut flakes (for garnish)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a 9-inch round cake pan, melt the butter over low heat. Once melted, remove from heat and sprinkle the brown sugar evenly over the butter.
  3. Arrange the pineapple slices on top of the brown sugar mixture, placing a cherry in the center of each slice if desired.
  4. In a mixing bowl, cream together the granulated sugar and eggs until light and fluffy. Add in the vanilla extract.
