Ingredients:

  • 1 pound pork tenderloin
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup green chilies, diced (fresh or canned)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium-high heat. Season the pork tenderloin with salt, pepper, cumin, and smoked paprika.
  3. Sear the pork tenderloin in the skillet for about 3-4 minutes on each side, until golden brown.
  4. Transfer the pork to a baking dish and roast in the oven for 20-25 minutes or until the internal temperature reaches 145°F (63°C). Let it rest for 5 minutes before slicing.
  5. In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent.
  6. Stir in the rice, green chilies, and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is cooked and the liquid is absorbed.
  7. Fluff the rice with a fork and adjust seasoning if necessary.
  8. Serve the sliced pork tenderloin over the green chili rice, garnished with fresh cilantro.
