Ingredients:

  • 1.5 lbs pork tenderloin
  • 1/4 cup red wine vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a small bowl, whisk together the red wine vinegar, minced garlic, smoked paprika, oregano, salt, black pepper, olive oil, and honey to create the marinade.
  2. Place the pork tenderloin in a resealable plastic bag or a shallow dish and pour the marinade over the pork. Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat your oven to 400°F (200°C).
  4. Remove the pork from the marinade and place it on a baking sheet lined with parchment paper. Reserve the marinade.
