Ingredients:

  • 1 cup rolled oats
  • 1 cup cottage cheese
  • 1/2 cup Greek yogurt
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup mixed berries (blueberries, strawberries, raspberries)
  • Honey or maple syrup for drizzling (optional)

Instructions:

  1. In a blender, combine the rolled oats, cottage cheese, Greek yogurt, eggs, vanilla extract, baking powder, cinnamon, and salt. Blend until smooth and well combined.
  2. Preheat a non-stick skillet over medium heat and lightly grease with cooking spray or a little oil.
  3. Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes until golden brown.
  4. Repeat with the remaining batter, adjusting the heat as necessary to prevent burning.
  5. Serve the pancakes warm, topped with mixed berries and a drizzle of honey or maple syrup if desired.
