Ingredients:

  • 2 lbs pork shoulder
  • 2 red bell peppers, chopped
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup BBQ sauce
  • 1 tablespoon smoked paprika
  • 1 tablespoon brown sugar
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 cup apple cider vinegar
  • 1/4 cup chicken broth
  • 1 tablespoon Worcestershire sauce

Instructions:

  1. Preheat the oven to 300°F (150°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion, garlic, and bell peppers. Sauté until softened, about 5-7 minutes.
  3. In a slow cooker, combine the sautéed vegetables with the pork shoulder, apple cider vinegar, chicken broth, Worcestershire sauce, smoked paprika, brown sugar, cumin, salt, and black pepper.
  4. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.
  5. Once done, shred the pork using two forks and mix it with the cooking juices.
  6. In a separate bowl, mix the BBQ sauce with any remaining sautéed bell peppers for an added twist.
  7. Serve the pulled pork on a platter topped with the bell pepper BBQ sauce.
