Ingredients:

  • 2 chicken breasts
  • 1 cup pumpkin, diced
  • 1 cup rice
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 4 slices of bacon, chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the diced pumpkin with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.
  3. While the pumpkin is roasting, cook the rice according to package instructions.
  4. In a skillet, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the bacon fat in the pan.
  5. In the same skillet, add minced garlic and dried rosemary, sautéing until fragrant. Add the chicken breasts, seasoning with salt and pepper, and cook for about 6-7 minutes on each side until golden brown and cooked through.
  6. In the last few minutes of cooking the chicken, add the broccoli and carrot slices to the skillet to steam slightly.
  7. To serve, place a scoop of rice in bowls, top with sliced chicken, roasted pumpkin, broccoli, and carrots, and sprinkle with crispy bacon.
