Ingredients:

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans
  • 1/2 cup chocolate chips (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Add the pumpkin puree, maple syrup, egg, and vanilla extract to the butter mixture, mixing well until fully combined.
  4. In another bowl, whisk together the rolled oats, flour, baking soda, cinnamon, nutmeg, ginger, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the chopped pecans and chocolate chips if using.
  7. Drop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
