Ingredients:

  • 1 box spice cake mix
  • 1 cup pumpkin puree
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup water
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 cup powdered sugar
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract for frosting
  • 1/2 teaspoon ground cinnamon for frosting

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a large mixing bowl, combine the spice cake mix, pumpkin puree, eggs, vegetable oil, water, and 1 teaspoon of vanilla extract. Mix until well combined.
  3. Add the ground cinnamon, nutmeg, ginger, and salt, and mix again until the batter is smooth.
