Ingredients:

  • 1 cup quinoa
  • 2 cups vegetable broth or water
  • 1 can black beans, drained and rinsed
  • 2 medium carrots, sliced
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato purée
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (like cilantro or parsley) for garnish

Instructions:

  1. Rinse the quinoa under cold water and then combine it with vegetable broth or water in a pot. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and liquid is absorbed.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add sliced carrots and diced bell pepper to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are tender.
