Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth or water
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (fresh, frozen, or canned)
  • 1 bell pepper, diced (any color)
  • 1 avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Optional: sliced jalapeños for heat

Instructions:

  1. In a medium pot, combine the quinoa and vegetable broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until all liquid is absorbed. Fluff with a fork and set aside.
  2. In a large bowl, combine the black beans, cherry tomatoes, corn, bell pepper, red onion, and cilantro.
  3. In a separate bowl, prepare the dressing by blending the avocado, lime juice, olive oil, cumin, chili powder, salt, and pepper until smooth.
  4. Add the cooked quinoa to the vegetable mixture and stir to combine. Drizzle the avocado-lime dressing over the top and toss gently to coat.
  5. Serve the bowl warm or at room temperature, garnished with diced avocado and jalapeños if desired.
