Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth or water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions:

  1. In a medium saucepan, combine the quinoa and vegetable broth or water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed.
  2. In a large bowl, combine the black beans, cherry tomatoes, bell pepper, avocado, red onion, and cilantro.
  3. In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper.
  4. Once the quinoa is cooked, fluff it with a fork and add it to the vegetable mixture. Drizzle the lime dressing over the top and gently toss to combine.
