Ingredients:

  • 2 cups Cooked Quinoa, Cooled
  • 1 can (14.5 Oz. Size) Black Beans, Drained And Rinsed
  • ½ whole Red Bell Pepper, Diced
  • 1 whole Mango, Diced
  • 1 whole Avocado, Diced
  • 1 whole Green Onion, Diced
  • ¼ cups Cilantro, Minced
  • 3 Tablespoons Fresh Lime Juice
  • 1 Tablespoon Red Wine Vinegar
  • 1 Tablespoon Olive Oil
  • ¼ teaspoons Salt, Or To Taste
  • ¼ teaspoons Black Pepper, Or To Taste

Instructions:

  1. In a large bowl, combine the cooled quinoa, black beans, diced red bell pepper, diced mango, diced avocado, diced green onion, and minced cilantro.
  2. In a small bowl, whisk together the fresh lime juice, red wine vinegar, olive oil, salt, and black pepper until well combined.
