  • 1 cup pre-cut coleslaw mix or shredded cabbage/carrot combo
  • ½ cup sliced bell peppers (any color)
  • ½ cup cooked quinoa or brown rice
  • 1 tsp sesame oil or olive oil
  • 1 tbsp low-sodium soy sauce or coconut aminos
  • ½ tsp grated ginger
  • ½ avocado (sliced)
  • 2–3 large lettuce leaves (like romaine or butter lettuce)
  • Optional: sprinkle of sunflower seeds or hemp hearts

Instructions:

  1. Heat the sesame oil in a pan over medium heat.
  2. Add the sliced bell peppers and coleslaw mix to the pan, sautéing for 3–4 minutes until just tender.
  3. Stir in the cooked quinoa or brown rice, low-sodium soy sauce, and grated ginger. Mix well and cook for an additional 1–2 minutes until everything is warmed through.
