Ingredients:

  • 1 cup dark chocolate, chopped
  • 1/4 cup cocoa butter, chopped
  • 1/2 cup heavy cream
  • 1/2 cup raspberry puree (fresh or frozen)
  • 1/4 cup corn syrup
  • 1/4 cup cane sugar
  • 1/4 teaspoon citric acid
  • 1/4 teaspoon salt
  • 1/2 cup freeze-dried raspberries, crushed
  • 1 teaspoon natural vanilla extract
  • 1 tablespoon butter

Instructions:

  1. In a double boiler, melt the dark chocolate and cocoa butter together until smooth.
  2. In a separate bowl, mix the heavy cream, raspberry puree, corn syrup, cane sugar, citric acid, and salt until well combined.
  3. Gradually add the raspberry cream mixture to the melted chocolate, stirring until fully incorporated and smooth.
  4. Stir in the crushed freeze-dried raspberries and vanilla extract.
  5. Pour the mixture into a lined square baking dish, smoothing the top with a spatula.
  6. Refrigerate for at least 2 hours or until set.
