Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1/4 cup milk
  • 1/2 cup heavy cream
  • 1/2 cup cream cheese, softened
  • 1 cup fresh raspberries
  • 1/2 cup chocolate chips

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the milk and heavy cream until fully incorporated.
  5. In a separate bowl, sift together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Fold in the raspberries and chocolate chips gently to avoid breaking the raspberries.
  8. In another bowl, beat the cream cheese until smooth. You can add a tablespoon of sugar to sweeten it slightly if desired.
  9. Spoon a tablespoon of muffin batter into each muffin cup, followed by a small dollop of cream cheese mixture, then top with another tablespoon of batter to cover the cream cheese.
  10. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  11. Let cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
