Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 large egg yolk
  • 2 tablespoons cold water
  • 1 cup fresh raspberries
  • 1 cup fresh mango, diced
  • 1 cup fresh cherries, pitted and halved
  • 1/4 cup honey
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, softened butter, sugar, and salt. Mix until crumbly.
  3. Add the egg yolk and cold water to the flour mixture, and stir until a dough forms.
  4. Press the dough into a tart pan evenly across the bottom and up the sides. Prick the bottom with a fork to prevent bubbling.
  5. Bake the tart shell for 15-20 minutes or until lightly golden. Remove from the oven and let cool.
  6. In a separate bowl, combine the raspberries, diced mango, cherries, honey, cornstarch, and vanilla extract. Gently toss to coat the fruit.
  7. Pour the fruit mixture into the cooled tart shell, spreading it evenly.
  8. Return the tart to the oven and bake for an additional 20 minutes, until the fruit is bubbly.
  9. Allow the tart to cool before slicing. Serve chilled or at room temperature.
