Ingredients:

  • 2 cups raspberry juice (unsweetened)
  • 2 tablespoons gelatin powder
  • 1 cup fresh raspberries
  • 2 tablespoons sugar (optional, adjust to taste)
  • Fresh mint leaves for garnish

Instructions:

  1. In a small saucepan, heat 1 cup of raspberry juice over low heat until warm but not boiling. Stir in 1 tablespoon of gelatin powder and sugar (if using) until fully dissolved. Remove from heat.
  2. Pour a thin layer of the dissolved mixture into a clear serving dish or individual cups and refrigerate until set, about 30 minutes.
  3. Once the first layer is set, gently place fresh raspberries on top of the layer.
  4. Heat the remaining raspberry juice and dissolve the remaining tablespoon of gelatin in it. Pour over the set layer and raspberries, then refrigerate again until set, about 30 minutes.
  5. Repeat layering with additional raspberry juice and gelatin mixture, setting each layer before adding the next, until all the juice is used or desired height is achieved.
  6. Once the final layer is set, garnish with fresh mint leaves before serving.
