Ingredients:

  • 2 large romaine lettuce leaves (or collard greens)
  • ½ avocado, sliced
  • ¼ cup grated carrots
  • ¼ cup chickpeas (canned, drained)
  • 1 tsp olive oil
  • dash of lemon juice
  • Salt, to taste
  • Pepper, to taste
  • Crushed red pepper flakes, to taste
  • Optional: a spoon of hummus

Instructions:

  1. Lay the romaine lettuce leaves flat on a clean surface.
  2. Layer the avocado slices, grated carrots, and chickpeas evenly on each leaf.
  3. Drizzle the olive oil and lemon juice over the layered ingredients.
  4. Season with salt, pepper, and crushed red pepper flakes to taste.
  5. If using, add a spoon of hummus on top of the fillings.
  6. Carefully roll the lettuce leaves tightly like a wrap.
  7. Cut in half if desired, and serve immediately or pack for on-the-go enjoyment.
